Asparagus, Avocado and Tomato Salad

Serves 4

3 cups of  Spinach

a handful of fresh basil leaves,  torn

2 cups cherry tomatoes, quartered

1 Avocado, peeled, pitted, thinly sliced

1 lb. of asparagus spears, blanched

Parmesan cheese and pine nuts for garnish


This is a modern twist  on a classic Nicoise Salad, it is even a vegetarian version. You could add grilled tuna , flank steak , scallops or salmon on top to add more protein and garnish with boiled eggs. It is what I want to eat for summer!
