Double Berry and Goat Cheese Pizza with Delightful Palate’s Stone Fruit Nectar

16 ounces prepared pizza dough

 6 ounces, fresh mozzarella sliced

5 ounces goat cheese

3/4 cup, chopped strawberries, leafy ends removed and sliced into 1/4-inch thick rounds

¾ cup blackberries

½ cup cubed pancetta, cooked and drained

¼ cup Parmesan cheese

¼- ½ Delightful Palate’s Stone Fruit Nectar

3 tablespoons fresh basil, chiffonade into short little strips

Salt and freshly ground black pepper

Instructions:

Preheat your oven to 400 degrees. Roll out your pizza dough into a 12 to 14-inch round on a floured surface and with a pastry brush spread 1 tablespoon of the stone fruit nectar on the surface of the dough. Top the pizza dough with the sliced mozzarella, big crumbles of goat cheese. In a bowl toss strawberries and blackberries in 2 tablespoons of the stone fruit nectar and season with salt and pepper and layer on top of the cheese. Sprinkle on the cooked pancetta and grated parmesan cheese. Bake on a lightly oiled baking sheet (or on a pizza stone, if you have one) until the cheese is bubbling and golden and the crust is crisp underneath, about 15 minutes.

Once the pizza is ready, top it with a sprinkle of basil and  lightly drizzle stone fruit nectar on top, and slice up and serve.
