Roasted Root Vegetables with Delightful Palate’s Wild Mayhaw Berry

2 pounds root vegetables such as, rutabagas, sweet potatoes,

carrots, turnips, beets,  and Cauliflower washed well,  and  cut into equal size pieces

3 Tablespoons extra-virgin olive oil

Sea salt and freshly ground pepper, to taste

4 tablespoons Delightful Palate’s Wild Mayhaw Berry, Plus more for drizzling           

1 red onion, skinned, quartered, root intact

Preheat the oven to 400 degrees. On a rimmed baking sheet, toss the root vegetables and onion with the olive oil, Delightful Palate’s wild Mayhaw Berry. Season with salt and pepper and spread the vegetables in a single layer. Roast for 20 minutes, turning once, until just softened or until the vegetables just starts to caramelize. Check the root vegetables by inserting with a knife until the pieces are tender and golden and drizzle with just a splash of Delightful Palate’s Wild Mayhaw Berry. Serve as a delicious side dish.
