The Fourth of July weekend is almost here!

Spend this quintessential American holiday with the ones you love, enjoying this refreshing Watermelon Salad with our own Delightful Palate Wild Mayhaw Berry vinaigrette. It's a perfect complement to the grill as an appetizer or dessert and will keep you refreshed wherever the weekend leads!

Watermelon and Feta Salad with Delightful Palate’s Wild Mayhaw Berry Vinaigrette

Serves 12

 One 8-pound seedless watermelon, scooped into balls with a melon baller or cut into 1 1/2-inch chunks (10 cups), chilled

1/2 pound feta cheese, crumbled (2 cups), or roll into balls and marinate in 1/3 cup of olive oil .

1 cup coarsely chopped mint leaves

½ cup pickled cherries, red onions and dried blueberries

1/2 cup  walnuts, toasted

1 cup Delightful Palate’s Wild Mayhaw Berry Vinaigrette

Salt to taste

In a large bowl Add the watermelon balls, drained  feta balls,  and toss gently. With Delightful Palate’s Wild Mayhaw Berry Vinaigrette garnish with the pickled cherries, red onions and dried blueberries, mint and serve. Garnish with the walnuts for texture.

Alternative: A simplier version of this recipe would be to use cubed watermelon, feta crumbles, minced red onion and mint.
