Green Bean and Walnut Salad

Serves 6

 

1 ½ pounds of green beans

½ cup toasted walnuts

¼ cup feta

1 boiled egg , grated

red onions , sliced thin, optional

 ¼ cup Delightful Palate’s Balsamic Garlic Honey vinaigrette

 

 Boil a large pot of water. Add 1 tablespoon salt and the green beans and cook until very tender, 6 to 8 minutes. Drain and run under cold water to cool.

 Pat green beans dry  with a paper towel and in a medium bowl  toss the green beans  with the vinaigrette. And taste for seasoning.  Place the dressed green beans on a platter in one layer and sprinkle over them a layer of the  red onion, feta cheese, grated egg and top with toasted walnuts.
