This recipe for Arugula, Dried Cherry, Feta Salad with Delightful Palate's Peach Balsamic Vinaigrette is what I have been eating for 6 nights in a row. It is a base salad recipe, in summer add asparagus, and sweet peas in the fall add citrus or pears. This is an all year recipe.

Arugula, Dried Cherry and Feta Salad

½ cup sliced almonds

4 cups arugula

½ cup coarsely chopped fresh basil

½ cup dried sour cherries or cranberries, chopped

⅓ cup crumbled feta

Freshly ground black pepper, to taste

½ cup Delightful Palate’s Peach Balsamic Vinaigrette

Optional -Blue cheese crumbles

 

To toast the almonds: Pre heat oven to 350 degrees place almonds on a sheet pan and toast for 5-8 minutes. Set aside to cool.

To assemble the salad, transfer the arugula, chopped basil, almonds, sour cherries and feta. Pour in the dressing; toss well and season to taste with additional salt and pepper (be sure to add enough salt so that the flavors really sing!). Set the salad aside for 10 minutes before serving
