Are there any foods that you wouldn't eat as a child that you eat now? Asparagus would come to mind and this is a recipe that would change your mind.

CRISPY PROSCIUTTO WRAPPED ASPARAGUS

Servings: 4 Prep Time: 5 minutes Cook Time: 15 minutes

 1 pound asparagus, tough ends trimmed and discarded

8 ounces prosciutto, very thinly sliced
1 tablespoon Delightful Palate’s Balsamic Garlic Honey Vinaigrette


Preheat the oven to 400 degrees. Wrap 2 asparagus spears with a slice of prosciutto. Place spears on baking sheet. Drizzle Balsamic Garlic Honey on the tips and ends of the asparagus (avoiding the prosciutto). Roast for 8-10 minutes, until the asparagus is cooked through and the prosciutto becomes crispy.

 

Horseradish Dipping Sauce

 

3 tablespoons of Horseradish

1- 8 oz. container of full fat sour cream

½ cup full fat mayonnaise

1 clove garlic, chopped finely

Juice of 2 lemons

2 green onions, chopped

Salt and pepper to taste

 

In a medium size bowl, add the sour cream, horseradish, mayo, garlic clove, lemon juice, green onions, salt and pepper. Mix well and adjust the seasoning.
