Fresh Cherry, Black Rice Salad with Delightful Palate’s Wild Mayhaw Berry

Makes 8 servings

  • 1 cup Black Rice
  • 2 cups pitted fresh cherries, sliced in half or quartered
  • ½ cup chopped celery
  • ½ cup Red Grapes, halved
  • 2 ounces goat chees, crumbled
  • ¼ cup of Delightful Palate’s Wild Mayhaw Berry
  • 3 Tablespoons Hemp seed or chopped pinenuts
  • Salt and Pepper to taste.

Combine I cup black rice with 1 ¾ cups water in a pot. Add 1 tablespoon butter and1/4 teaspoon of salt. Bring to a boil. Reduce heat, cover with lid and simmer for 35-40 minutes. Remove from heat and let stand covered for 5 minutes or until water is absorbed. Fluff with fork.

In a large bowl add the cooled black rice, celery, grapes, cherries and toss with Delightful Palate’s Wild Mayhaw Berry . Taste for seasoning.

Sprinkle  the top with hemp seed and crumbled goat cheese on top. Serve.
