Green Bean and Roasted Tomato Salad

Serves  2-4

 

Slow Roasted Tomatoes

1- 8 oz. packaged cherry tomatoes, sliced in half

2 teaspoons fresh basil

2 tablespoons fresh rosemary

3 garlic cloves, sliced thin

2 Tbl brown sugar

¼ cup Delightful Palate’s Balsamic Garlic Honey Vinaigrette

½ teaspoon salt

Black pepper

 

Line a cookie sheet with foil. In a mixing bowl mix the tomatoes, basil, rosemary, garlic, brown sugar, salt, pepper and ¼ cup Balsamic Garlic Honey vinaigrette. Place on the cookie sheet and bake in a 250-degree oven for 2 to 3 hours until caramelized around the edges. Put in a container and place in the fridge.

 

Green Bean and Slow Roasted Tomato Salad

12 ounces slender green beans, ends removed

1 cup slow roasted tomatoes

¼ Delightful Palate’s Balsamic Garlic Honey Vinaigrette

salt and pepper

 

Blanch green beans in salted boiling water for 3-4 minutes. Drain and refresh in cold water. Blot the green beans dry and in a medium bowl toss beans, roasted tomatoes and the vinaigrette together. Taste for seasonings and serve.
