Grilled Vegetable Panzanella Salad in Avocado Cups

Avocado Cups with Grilled Vegetable Panzanella Salad and Delightful Palate’s Balsamic Garlic Honey

Serves 6

Adapted from Smitten Kitchen 

 

2 Yellow Squash, cut lengthwise into 3 pieces

2 zucchini, cut lengthwise into 3 pieces

3 shallots cut into quarters through  the root end

½ cup Delightful Palate’s Balsamic Garlic Honey Vinaigrette

1/2 hothouse cucumber, peeled, seeded and chopped

1 cup grape tomatoes, halved

10 large basil leaves

¼ cup fresh parlsey, chopped

1 red bell pepper, seeded and cut into 3 large pieces

½ loaf of Prussian Rye, cut into 1-inch thick slices

3 Avocado’s cut in half, seeds removed

 

Prepare a charcoal grill with hot coals. Brush the grilling rack with olive oil.

Place the cucumber, tomato, basil, parsley in a large bowl, sprinkle with salt and pepper and toss together with the Balsamic Garlic Honey Vinaigrette. Set aside. 

When the grill is ready, brush 1 side of the squash; zucchini slices shallots and the peppers with the Balsamic Garlic Honey Vinaigrette. Place the brushed side down, on the grill and cook for 3- 4 minutes. Brush the other side with the vinaigrette, turn them over and continue cooking an additional 3-4 minutes. Remove the vegetables from the grill and place on a cutting board and chop into small pieces. Chop the peppers and the shallots and add them both to the cucumber mixture. 

Brush the bread slices on both sides with olive oil and toast them on the grill until golden. For the avocado cups, cut the bread into small croutons and add them to the cucumber mixture. Pour the reserved vinaigrette over the vegetables and toss 

For the avocado cups:

Halve avocados and remove pits. Score avocado halves with a knife, cutting lines in both directions to form a grid, but being careful not to through the skin, sprinkle with salt and pepper and drizzle some of the vinaigrette on top. Then heap each avocado half with grilled vegetable Panzanella salad.
