A refreshing summer salad the jalapeno oil in the vinaigrette pairs nicely with the sweetness on the mangoes.


Mango Slaw with Honey Ginger Jalapeno Vinaigrette

1 bag of sliced cabbage

1 red bell peppers, stem and seeds removed, sliced into thin strips

2 small red or green hot chilies, stem and seeds removed, sliced thin

2 small mangoes, peeled and sliced into thin strips

1/2 cup chopped cilantro

1 cup glass noodles, cooked

Peanuts for garnish


Toss cabbage, bell peppers, and chilies with dressing in a large mixing bowl. Fold in mango slices and cilantro. Taste and add a pinch more sea salt or a squeeze of lime if needed.

Put glass noodles on platter and mound mango slaw on top . Garnish with cilantro and peanuts


Honey Ginger Jalapeno Vinaigrette

3 tablespoons Honey Ginger Balsamic Vinegar

1 teaspoon lime zest,

1 tablespoon lime juice

1 tablespoon sweet onion, chopped

1 teaspoon Dijon mustard

2 teaspoons honey

1 tablespoon mint, chopped

1 tablespoon basil, chopped

½ teaspoon salt

¼ cup Garlic Jalapeno Oil


 In a small bowl combine all ingredients except oil and whisk , add the jalapeno oil and continue to whisk until  combined.
