The Only Peanut Butter Sandwich Cookies


 Criss Cross Peanut Butter Cookies

From the Settlement cookbook


½ cup Shortening

½ cup butter

1 cup white sugar

1 cup brown sugar

2 eggs

3 cups flour

1 ½ teaspoons soda

½ teaspoon salt

1 teaspoon vanilla

1 cup creamy peanut butter

Mix white and brown sugar. Cream shortening and buter, then add sugar and cream well. Add the eggs well beaten, vanilla, the flour sifted with the salt and soda, and then the peanut butter. Mix well. Roll into balls about ¾  to 1 inch across and roll into sugar. iPlace 1 inch apart on greased pans, press with fork length wise and cross wise. Bake at 400 degrees from 5-10 minutes. ( I bake mine for 7 minutes in a convection oven) Makes about 3 dozen.


Peanut butter filling

1 ½ cups of Confectioner’s sugar

8 Tablespoons butter, softened

1 cup of smooth peanut butter ( or a combination of Peanut Butter, Biscoff Cookie Spread and Justin’ s Maple Almond Butter)

3 Tablespoons of heavy cream

¼ cup chopped peanuts

¼ cup mini semi sweet morsels (or a combination of mini morsels, chopped up Reese’s Peanut Butter Cups and Milk Chocolate chips, and now you have about a 1 cup)

Mix all together in a bowl.

To assemble cookies:

 Place about 1 heaping tablespoon onto the bottom on a peanut butter cookie and top with another cookie and push together. If you feel like dressing these cookies up place some chopped peanuts and mini morsels on a plate and roll the sides of the cookies in them.
