A Roasted Chicken, Spring Vegetable Salad With Delightful Palate’s Peach Balsamic  Vinaigrette

Ingredients:


4 Roasted Chicken Thighs


1 lb. blanched asparagus


4 large roasted carrots cut into 1-inch pieces


3 large carrots, grated

3 beets, roasted or  buy pickled


1 lb. broccoli florets, 
roasted

1 green onion, chopped

Salt and pepper to taste

Feta or Goat Cheese crumbles

1⁄2 cup of Delightful Palate’s Peach Balsamic or Pepper Jelly Vinaigrette

1 boiled egg ,grated

Garnish: Radishes and Herbs

 

Cut chicken thighs, asparagus, & beets into 1-inch cube. In a large bowl combine all ingredients together season with salt and pepper and drizzle with vinaigrette.
