What to do with all the Satsuma's that are loaded on the trees?
Satsuma Salad
serves 2
4 Satsuma, peeled and segmented
2 tablespoons of dried cranberries
2 tablespoons of dried blueberries
¼ cup toasted pecans
¼ cup feta cheese
¼ cup flat leaf parsley, chopped
¼ cup Delightful Palate’s Peach Balsamic vinaigrette
Salt and pepper to taste
On a platter, begin layering the Satsuma’s, cranberries, blueberries, pecans, feta, parsley . Drizzle with the Peach Balsamic vinaigrette and season with salt and pepper
