Shrimp with Cilantro, Garlic and Lime

 

2 limes

2 teaspoons fish sauce

½ teaspoon sugar

2 garlic cloves, minced

1 pound (about 15) jumbo shrimp, shelled and deveined

2 teaspoons canola oil

Coarse salt and freshly ground pepper

1 ½ cups coarsely chopped fresh cilantro, divided

2 scallions, finely chopped

 

 

 

Preheat oven to 400 degrees. Zest limes into a bowl. Squeeze in juice from 1 lime, and whisk in fish sauce, garlic, sugar and 1 cup of chopped cilantro add the shrimp and toss.

Preheat oven to 400 degrees lightly season with salt and pepper roast on a sheet pan until pink and firm to the touch about 5 minutes remove from the oven and add the scallions. Squeeze remaining lime over shrimp. Serve
