Strawberry Caprese Bruschetta

Makes 10 to 12 servings

1 ½ cups sliced fresh strawberries

1 cup fresh blueberries

1 cup quartered grape tomatoes

8 oz. fresh mozzarella, chopped or other cheese

1/3 cup dried cranberries, chopped

¼ cup dried blueberries, chopped

1/3 cup fresh basil, chopped

1/3 cup arugula, chopped

¼ cup Delightful Palate’s Stone Fruit Nectar

Salt and pepper to taste

In a medium bowl, stir together strawberries, blueberries, tomatoes, mozzarella,cranberries, dried blueberries, basil, arugula, salt and pepper. Toss with Delightful Palate’s Stone Fruit Nectar and taste for seasoning. Serve over toasted bread slices.

Artisan Bread for Bruschetta:

A loaf of Fig and Walnut, brioche or baguette, sliced

¼ c -1/2 cup of Delightful Palate’s Stone Fruit Nectar

Preheat oven to 375 degrees, place sliced bread on a sheet pan brush with Delightful Palate’s Stone Fruit Nectar and bake for 10-13 minutes or until golden brown and crunchy.
